If you’re searching for a little something Easter-ish to throw together, these bunny cookies were simple to do. I think I saw something along these lines on Pinterest, (or some other form of social media used for making us feel inferior). The key for me, is that they’re made using an egg-shaped cookie cutter. I really seem to struggle using intricate “shapes.” When using actual bunny shapes, their ears always seem to fuse together into one long shape on top of their rounded heads….prompting a lot of “Yeah, those are nice, but do you think they’re appropriate for the kids?” But a simple oval-like shape? I can totally handle that. You can use any cookie recipe you like. I went for a butter cookie. I got the recipe from a family member, but I believe it may originally be from an old-timey cook book (Better Homes and Gardens maybe?)
For the cookies:
- 1 cup butter
- 1/3 cup granulated sugar
- 1 tablespoon water
- 1 teaspoon vanilla
- 2 1/4 cups all-purpose flour
Beat the butter with an electric mixer for 30 seconds. Add the sugar, water & vanilla. Beat until combined. Beat the flour in a little at a time. I chill the dough for a short time to make it easier to roll out. Using your egg-shaped cookie cutter, cut away. Bake at 325° for 20 minutes on a cookie sheet, until the bottoms are lightly browned. Cool completely before icing.
For the white icing, I used:
- 1 cup of powdered sugar
- 2 tablespoons of milk. (Feel free to also add 1/4 teaspoon vanilla or almond extract)
- beat ingredients together until smooth and icing-like
Just paint or spoon the icing onto the cookies. It will harden relatively quickly, so don’t wait too long to add your little pink candy nose. I got the pink candies at Michael’s. You can also use royal icing, but since it uses raw egg whites, I find it a bit dicey. While Salmonella is a pretty enough name, she’s not welcome in my house. Not today.
For their fluffy little bunny tails, I used:
- mini marshmallows
- white chocolate
- white sparkling sprinkles
I melted the white chocolate, dipped the marshmallow in, and rolled it in the sprinkles. I then attached it to the cookie using some of the melted white chocolate as “glue.”
For their ears, I used:
- pre-packaged pink cookie icing, (the kind that hardens) because I’ve kind of checked out a little at this point and time’s a factor.
I dotted their eyes on with a black cake pen I already had on hand (which I picked up in the baking aisle of the grocery store). Done.
Side note: I added the tail, eyes and ears after the white icing had hardened completely.
