How to Grill Avocado - Easy Grilled Avocado Recipe

Our obsession with all things avocado continues.  Deemed the “good fat” avocado can help with lowering cholesterol, are loaded with fiber, filled with antioxidants and, plus, they just taste really good!  Outside of tossing these into your salad, you can create some tasty side dishes especially when you fire up the grill this summer.  Here’s how to make our new favorite side dish:  Grilled Avocado with Pico de Gallo.

How to Make Grilled Avocado

Ingredients:

  • 4 Medium Sized Avocados (tip:  pop off the stem in the supermarket and if the shallow hole is yellow, you’re good!)
  • Light Extra Virgin Olive Oil
  • 2 Limes
  • 4 Plum Tomatoes
  • 1 Bunch of Cilantro
  • 1/2 Large White Onion

Avocado Directions:

  • Slice each avocado in half directly down the center and remove the pit (tip:  removal easily with a small spoon)
  • With a standard marinating brush, lightly brush each half of the avocado with extra virgin olive oil
  • Squeeze two limes into a bowl and lightly brush lime juice over each half
  • Place skin side up on the grill with inside of the avocado directly on the grill
  • Grill on medium high for 3-6 minutes

Pico de Gallo Directions:

  • Dice 4 plum tomatoes into tiny squares and place into a large bowl
  • Dice half an onion and place into same large bowl
  • Add about 1 cup of fresh cilantro (leaves only!) into same large bowl (add more or less based on your own preference)
  • Pour a little remaining fresh lime juice into bowl (add a pinch of salt if desired) and lightly mix tomatoes, onions and cilantro

Once your avocados are hot off the grill pack your pico de gallo into the center of each grilled avocado and lightly drizzle a little more fresh lime juice over all of them.  Serve and enjoy!  Here’s the ones we just made this weekend!
