Infusing cocktails with herbs adds some freshness that can brighten up a seemingly mundane list of ingredients. Thyme may be overflowing in your garden so now is the perfect time to create some thyme-honey simple syrup. The simple syrup is made of equal parts honey and water and a few sprigs of thyme; simmer for five minutes and cool before mixing into your cocktails.
2 oz Rye or Bourbon
2 oz Lemon Juice
1 oz Honey-thyme Simple Syrup
2-3 Thyme Sprigs
Fill a glass with crushed ice, mix equal parts rye and lemon juice. Add half as much honey-thyme simple syrup, more if you would like a sweater tasting drink. Add a few sprigs of thyme to garnish the glass.
